This beloved meal has been a staple in my family for generations, each bite transporting me back to warm summer evenings spent gathered around the table, savoring every morsel.
Growing up, I watched my abuela masterfully prepare these tacos, meticulously seasoning the ground beef to perfection and chopping the crisp lettuce and juicy tomatoes with practiced precision. The secret, she always said, was in the spices – a harmonious blend of earthy cumin, zesty chili powder, and fragrant oregano that infuses the meat with bold, mouthwatering flavor. Ingredients:
1 lb ground beef
1 packet taco seasoning (or homemade blend of cumin, chili powder, oregano, garlic powder, onion powder, salt, and pepper)
8 corn tortillas, warmed
1 head romaine lettuce, shredded
2 tomatoes, diced
1 avocado, mashed into guacamole
1 cup shredded cheddar cheese
Sour cream for serving
Lime wedges for serving
Instructions:
In a large skillet over medium-high heat, cook the ground beef until browned and crumbled, about 5-7 minutes. Drain any excess fat, then stir in the taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes, until the sauce has thickened to a hearty, flavorful consistency.
While the beef is simmering, warm the corn tortillas according to package instructions, or by lightly charring them over an open flame or in a dry skillet.
To assemble the tacos, layer each warm tortilla with a generous portion of the seasoned ground beef, followed by a generous handful of shredded romaine lettuce, a sprinkling of diced tomatoes, a dollop of creamy guacamole, and a sprinkle of shredded cheddar cheese.
Top each taco with a dollop of cool, tangy sour cream and serve immediately with fresh lime wedges on the side, for guests to squeeze over the top as desired.
